The privileged geographical location of the Empordà, between the Mediterranean Sea and the Pyrenees, means that the climate combines mild winters and temperate summers with the Tramuntana, the cold northerly wind. These characteristics and the land dominated by the mountain substrata that form a typical geology of granites, slates and clay, forge the character of Ylla oil, with its own special stamp …
The oil of the Empordà is notably complex, with aromas that recall freshly-cut grass, artichokes and almonds. In the mouth they are balanced oils that, on average, are bitter and spicy.
Like wine, oil brings a range of pleasant sensations to the palate. The environment, the purity of the mixtures, the process of preparation and care, all have an influence on its final taste.
