We have kept the same spirit and love of doing things properly since antiquity. The olives are collected and pressed the same day. Once pressed they must be beaten and the oil separated from the pulp. Once separated, the oil is decanted. From that moment on, it can be stored. The tools for producing it have changed. Human or animal strength has been replaced by electricity … but the processes carried out from the collection of the fruit to its packaging, remain practically the same. The adjective Virgin, which is attributed to the oil, means that in the production process, only mechanical procedures have been used to extract the juice from the olives.
The olive oil of the Empordà is directly linked to the history, culture and tradition of the Alt Empordà region.
The oil is 100% oil.
Since1873 we have continued to use the same processes and the same care in the selection of the source olives, taking all the time necessary for its slow production.
